On the top caramellised cane sugar surfce is waiting for break-through. We offer, a small slice of brioche with honey and almonds to it.
Goose liver terrine:
With „surprise” in the inside. Served with a small slice of dried fruit bread.
Goose liver paté:
In pistachio coat, accomapnied by, in red wine stewed, almond filled dried plum.
Fresh, crispy goose greaves
Served with new onion, tomato, green pepper and fresh bread.
Cold countryside goose liver confit with its dripping
Served with young onion, tomato and fresh bread.
Duck liver nibbles braised in their own grease, served in a small pot with fresh bread.
Goose liver soup
Soup of goose meat parfumed with Madeira and offered with a slice of marinated, grilled goose liver and black truffle flavoured semolina dumpling.
Goose broth with matzo balls
Served with soft and tender goose meat, vegetables and small noodles.
Pumpkin cream soup
Served with toasted pumpkin seeds and a few drops of pumpkin oil
The skin of goose is stuffed with soft goose meat, smoked beef tongue, aromatic spices, it means with a good, so called bread roll – filling. Then baked in oven with vegetables until golden and served with its own gravy. As a company we offer mashed potatoes and stewed spicy quince.
Fresh goose liver with steamed grape
The goose liver is marinated in Sherry during a night then seared on a hot grill. From the marinade we prepare a sauce in that stoned grapes are steamed. We offer this delicious sauce to the nice goose liver served on coated milk-loaf. (For two people as a starter also)

Served with baked apple, crispy onion rings and mashed potato.
Wedding goose – Crispy goose leg
A crispy leg of goose, with a slice of grilled goose liver, steamed red cabbage, in red wine stewed prune, stewed spicy quince and sautéed potatoes mashed up with onion.
Crispy goose leg
Served with garlic and parsely seasoned fried potatoes.
Cassoulet, baked in iron pot
With smoked breast of duck, stuffed gooseneck, pearl barley and hard-boiled egg.
Oven baked crispy young goose in whole
Under a bacon cover, apple, marjoram and rosemary in the inside, the goose is baked in oven, slowly untill crispy and auburn. Served with sautéed potatoes mashed up with onion, steamed red cabbage, in red wine stewed prune and a compote of quince. For a company of 3 -4 members, it’s a real festive dish. (Depending on the appetite and the size of stomach)

Breast of goose in hunter’s sauce
Braised in a piquant marinade with lots of vegetables. From the vegetables we prepare hunter’s sauce. Served with sour cream and grilled slices of freshly-shot dumplings.
Oven baked crispy duck
Served with steamed red cabbage, in red wine stewed prune, stewed spicy quince and sautéed potatoes mashed up with onion to it.

Goose liver pot with rice and vegetables
Vegetables were braised in goose broth then seared on onion with goose liver and finally mixed with mushroom flavoured
Orange flavoured duck breast with fresh salad
The duck breasts were marinated in herb seasoned olive oil for 2 days, then baked in the oven. We offer this delicacy, with a ginger – honey orange sauce, fried rosemary, mushroom flavoured steamed rice and fresh salad.
Beef tenderloin tournedos (16dkg) with a slice of goose liver
With grilled bolets and mashed potato.
Médallions of venison with cranberry, boletus sauce
The médallions of soft and tender venison are grilled then served with a piquant sauce of dried cranberry-boletus-thyme and home-made potato balls.
Countryside breaded chicken with parsely seasoned potatoes
Honey flavoured breast of turkey
The breast of turkey is coated in a honey seasoned croute and fried until crispy then served with fresh strawberry sauce and home-made potato balls.
Oven baked shoulder of lamb parfumed with spices
The piece of lamb was marinated in spicy oil during a few days then braised long time to be soft and tender. Finally baked in oven with honey and beer until auburn that’s why its outside and scent became very attractive. We offer saffron flavoured mashed potato, garlic confit and a spicy sauce to it. Very delicious dish.
