Our well pronounced goal is to reach the highest level of gourmet quality attainable; for that reason we purchase our fish and seafood materials from the clearest water sources and cook always according to season. The tuna arrives from the Mediterranean Sea, the beef tenderloin and sirloin from New-Zealand. Throughout the cooking process our kitchen staff use ultra-soft water, exclusively. We never work with artifical or synthetic materials. Even the chicken comes from well-trusted farms. Although sushi and sashimi have become widely known for the public, it is important for us to show how warm dishes are essential parts of the traditional Japanese cuisine too.
